Ingredients

Scale
  • 2 lb lean ground turkey (93% lean recommended)
  • 1/2 cup breadcrumbs (Panko or traditional)
  • 2 large eggs
  • 3 Tbsp ketchup
  • 2 Tbsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 1/2 tsp salt
  • 1 tsp freshly ground black pepper
  • Optional: 1/2 tsp smoked paprika
  • Optional: 1 cup shredded sharp cheddar cheese
  • 8 burger buns
  • Condiments: ketchup, mustard, mayo, BBQ sauce, aioli
  • Toppings: lettuce, tomato, red onion, pickles, avocado, crispy bacon, sautéed mushrooms, jalapeños

Instructions

  1. Mix Gently: In a large bowl, combine ground turkey, breadcrumbs, eggs, ketchup, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. If using, add smoked paprika and shredded cheddar. Use your hands to mix lightly until just combined; do not overmix.
  2. Shape the Patties: Divide the mixture into 8 equal portions. Gently form each portion into a ball, then flatten into patties about 3/4 to 1 inch thick. Make a slight indentation in the center of each patty with your thumb.
  3. Cook Your Way:
  4. Grill Method: Preheat grill to medium-high heat. Lightly oil grates. Place patties on grill, close lid, and cook for 5-6 minutes per side, or until internal temperature reaches 165°F.
  5. Stovetop Method: Heat 1 tablespoon of oil in a large skillet over medium heat. Add patties (cook in batches if needed) and cook for 5-6 minutes per side, until internal temperature reaches 165°F.
  6. Oven Method: Preheat oven to 375°F. Place patties on a parchment-lined baking sheet. Bake for 10-12 minutes, flip, and bake for another 10-12 minutes, or until internal temperature reaches 165°F.
  7. Rest is Best: Transfer cooked burgers to a plate and let them rest for 3-4 minutes before assembling.
  8. Assemble & Enjoy: Toast burger buns. Spread with condiments, place a juicy turkey burger patty on the bottom bun, and add your favorite toppings. Crown with the top bun.

Notes

  • For the juiciest turkey burgers, avoid using ultra-lean ground turkey and do not overmix the patty mixture.
  • Toasting the burger buns is essential for texture and preventing sogginess.
  • A meat thermometer is recommended to ensure the burgers are cooked to a safe internal temperature of 165°F.
  • These patties can be made ahead of time and refrigerated for up to 24 hours or frozen for up to 3 months.
  • Experiment with different toppings and flavor combinations for endless gourmet burger variations.
