This easy Keto Greek Chicken Recipe has rich Mediterranean flavors in every bite. A simple sheet pan meal that cooks in the oven in no time.

Ingredients

  • 2 tbsp avocado oil
  • 2 lb frozen chicken tenders
  • 1/2 pint tomatoes
  • 1 large zucchini
  • 1/2 tsp salt
  • 3 sprigs fresh dill
  • 1 tbsp fresh dill (finely chopped)
  • 2 tbsp feta cheese (finely chopped)
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil

Instructions

  1. Preheat oven to 400.
  2. Drizzle the avocado oil on a large sheet pan. Put the chicken, tomatoes, dill, and zucchini on the tray. Sprinkle with salt. Bake for 30 minutes.
  3. Meanwhile, stir together the topping ingredients.
  4. After 30 minutes the chicken should be cooked through. Remove the chicken to a serving tray. Turn the broiler on. Put the tray of veggies on the top oven rack. Broil for 3-5 minutes or until they are beginning to brown and look roasted. Discard the cooked dill sprigs.
  5. Put the veggies on top of the chicken on the serving tray. Sprinkle the feta mixture on top.
