1 cup natural peanut butter (smooth or crunchy)
1 cup granulated erythritol or another keto-friendly sweetener
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon salt
Sugar-free chocolate kisses (for topping)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the peanut butter, erythritol, egg, vanilla extract, baking soda, and salt. Mix until smooth and well combined.
Using your hands, roll the dough into small balls, about 1 inch in diameter. Place them on the prepared baking sheet, spacing them about 2 inches apart.
Gently press down each dough ball with a fork to create a crisscross pattern on top.
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Remove the cookies from the oven and immediately press a sugar-free chocolate kiss into the center of each cookie.
Allow the cookies to cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely.
