Keto Snowball Cookies are melt-in-your-mouth delicious. With just three net carbs per cookie, they are perfect for your holiday cookie tray.

Ingredients

  • 4 oz cold salted butter (cut into pieces)
  • 1 cup almond flour
  • 1/3 cup coconut flour
  • 1/3 cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
  • 2 tsp gelatin
  • 1 tsp vanilla
  • 1 cup walnuts (or pecans)
  • 1 cup powdered sweetener

Instructions

  1. Preheat oven to 350. Line a large cookie sheet with parchment paper.
  2. Combine the butter, almond flour, coconut flour, granular sweetener, gelatin, and vanilla in a food processor. Pulse until wet crumbs form. Add the walnuts. Pulse until they are chopped. The dough will come together into a ball as the nuts are chopped.
  3. Divide the dough into 16 pieces. Put the powdered sweetener in a shallow bowl. Roll each piece of dough into a ball. Roll in the sweetener. Put on the prepared baking sheet. Repeat.
  4. Bake for 15-17 minutes or until firm to the touch. Cool for 10 minutes. Roll in sweetener a second time.

Notes

  • Use different nuts if desired.
  • Store in an airtight container.
