Keto Tiramisu Cookies are a low-carb, sugar-free take on the classic Italian dessert, featuring almond flour coffee cookies sandwiched with a creamy mascarpone filling and dusted with cocoa.

Ingredients

  • 2 cups almond flour
  • 1/4 cup butter, softened
  • 1/3 cup powdered monk fruit or erythritol
  • 1 tsp instant espresso powder
  • 1 egg
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/2 cup mascarpone cheese
  • 2 tbsp powdered monk fruit sweetener
  • 12 tbsp heavy cream
  • 1/2 tsp vanilla extract
  • Unsweetened cocoa powder, for dusting

Instructions

  1. Preheat oven to 325°F (160°C). Line baking sheets with parchment paper.
  2. In a bowl, cream butter and sweetener until light and fluffy.
  3. Mix in egg, vanilla extract, instant espresso powder, and salt until smooth.
  4. Stir in almond flour to form a soft dough. If sticky, chill for 15-20 minutes.
  5. Scoop 1-inch balls, flatten slightly, and place on prepared baking sheets about 2 inches apart.
  6. Bake for 10-12 minutes until edges are lightly golden and set.
  7. Cool cookies completely on the baking sheets before moving to a wire rack.
  8. While cookies cool, beat mascarpone cheese, powdered sweetener, and vanilla extract until smooth.
  9. Add heavy cream one tablespoon at a time until the filling reaches a smooth, spreadable consistency.
  10. Spread or pipe a generous amount of filling onto the flat side of one cookie.
  11. Top with another cookie to create a sandwich.
  12. Just before serving, dust the tops of the assembled keto tiramisu cookies lightly with unsweetened cocoa powder.
