1 cup granulated sugar
2 tsp baking powder
½ tsp salt
1 cup unsweetened almond milk
⅓ cup vegetable oil
½ cup fresh grapefruit juice
Zest of 1 grapefruit
Instructions
Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, combine almond milk, vegetable oil, grapefruit juice, and zest until mixed.
Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
Pour the batter into the prepared loaf pan and bake for 45-50 minutes or until a toothpick comes out clean.
Allow cooling for ten minutes in the pan before transferring to a wire rack.
