Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup graham cracker crumbs
  • 1 cup chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and graham cracker crumbs.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Gently fold in the chocolate chips and mini marshmallows until evenly distributed throughout the s’mores cookie dough.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges of the s’mores cookies are lightly golden. The centers may look slightly underbaked; they will continue to cook on the baking sheet.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Serve the s’mores cookies warm or at room temperature and enjoy your delicious homemade s’mores cookies!

Notes

  • For an extra touch, drizzle melted chocolate over the cooled s’mores cookies or add a sprinkle of sea salt before baking.
  • These s’mores cookies are best enjoyed fresh but can be stored in an airtight container at room temperature for up to a week.
  • You can substitute all-purpose flour with a 1:1 gluten-free flour blend for gluten-free s’mores cookies.
