These Mushroom Shawarma Pitas are a plant-based dream—crispy, caramelized mushrooms seasoned with warming shawarma spices, tucked into pillowy pita with creamy tahini, sharp onions, and fresh herbs.

  • 1 lb (450g) mixed mushrooms (like portobello, oyster, or cremini), sliced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp garlic powder
  • 1/2 tsp turmeric
  • Salt & pepper to taste
  • 4 warm pitas or flatbreads
  • 1/3 cup tahini
  • Juice of 1/2 lemon
  • 1/4 cup water (to thin tahini)
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup pomegranate seeds

Instructions

  1. Preheat oven to 425°F (220°C). Toss mushrooms with olive oil and spices. Spread on a baking sheet and roast 25–30 minutes until browned and crisp.
  2. In a small bowl, mix tahini with lemon juice, water, and a pinch of salt until smooth.
  3. Warm pitas, then layer with roasted mushrooms, onions, parsley, and drizzle with tahini sauce.
  4. Sprinkle with pomegranate seeds just before serving for a bright finish.
