One-Pot Jamaican Curry Chicken is a flavorful and easy dish that brings the taste of Jamaica to your kitchen.

  • 2 pounds chicken thighs, boneless and skinless
  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 bell pepper, chopped (red or green)
  • 2 carrots, sliced
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • 2 green onions, chopped
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a bowl, combine the curry powder, allspice, salt, and black pepper. Rub this mixture all over the chicken thighs and set aside.
  2. In a large pot or Dutch oven, heat the vegetable oil over medium heat.
  3. Add the chopped onion, garlic, and ginger to the pot. Sauté for about 3-4 minutes until fragrant.
  4. Add the seasoned chicken thighs to the pot. Cook for about 5-7 minutes, turning occasionally until browned on all sides.
  5. Stir in the bell pepper and carrots. Cook for an additional 3-4 minutes.
  6. Add the coconut milk, chicken broth, and soy sauce to the pot. Stir everything together to combine.
  7. Bring the mixture to a gentle simmer. Cover the pot and let it cook for about 20 minutes, or until the chicken is cooked through and tender.
  8. Taste the sauce and adjust the seasoning if needed.
  9. Once cooked, remove from heat and sprinkle with chopped green onions and fresh cilantro if desired.
