- 2 pounds chicken thighs, boneless and skinless
- 2 tablespoons Jamaican curry powder
- 1 teaspoon allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons vegetable oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 1 bell pepper, chopped (red or green)
- 2 carrots, sliced
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 1 tablespoon soy sauce
- 2 green onions, chopped
- Fresh cilantro for garnish (optional)
- In a bowl, combine the curry powder, allspice, salt, and black pepper. Rub this mixture all over the chicken thighs and set aside.
- In a large pot or Dutch oven, heat the vegetable oil over medium heat.
- Add the chopped onion, garlic, and ginger to the pot. Sauté for about 3-4 minutes until fragrant.
- Add the seasoned chicken thighs to the pot. Cook for about 5-7 minutes, turning occasionally until browned on all sides.
- Stir in the bell pepper and carrots. Cook for an additional 3-4 minutes.
- Add the coconut milk, chicken broth, and soy sauce to the pot. Stir everything together to combine.
- Bring the mixture to a gentle simmer. Cover the pot and let it cook for about 20 minutes, or until the chicken is cooked through and tender.
