  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar (for rolling)
  • 36 chocolate kisses, unwrapped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the peanut butter, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until smooth and creamy.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
  5. Scoop out tablespoon-sized portions of dough and roll them into balls.
  6. Roll each ball in granulated sugar to coat evenly.
  7. Arrange the sugar-coated dough balls on the prepared baking sheet, leaving about 2 inches between each one.
  8. Place in the preheated oven and bake for 10-12 minutes or until the edges are lightly golden.
  9. Remove the cookies from the oven and immediately press a chocolate kiss into the center of each cookie.
  10. Allow the cookies to cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.
