Instructions

  1. Place the boneless, skinless chicken breasts in the bottom of your slow cooker or Instant Pot.

  3. Pour the chicken broth over the seasoned chicken.
  4. Add the softened cream cheese on top of the chicken, ensuring it covers the surface.
  5. For a slow cooker: Cover and cook on low for 4-6 hours, until the chicken is tender and easily shredded. For an Instant Pot: Close the lid and set it to high pressure for 10 minutes, then allow for a natural release.
  6. Once cooked, shred the chicken with two forks directly in the pot.
  7. Stir in the shredded pepper jack cheese until it melts and blends seamlessly into the chicken mixture.
  8. Sprinkle chopped green onions over the top for garnish and added flavor.
