  • 2 racks of baby back ribs (about 45 pounds)
  • Salt and pepper, to taste
  • 1 cup pomegranate juice
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh pomegranate seeds, for garnish
  • Chopped parsley, for garnish

Instructions

  1. Begin by preheating your oven to 300°F (150°C).
  2. Pat the ribs dry with paper towels. Season both sides generously with salt and pepper.
  3. In a medium saucepan, combine pomegranate juice, brown sugar, soy sauce, honey, apple cider vinegar, minced garlic, ground ginger, ground cinnamon, and crushed red pepper flakes. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  4. Place the ribs in a large resealable bag or a shallow dish. Pour the pomegranate marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight for optimal flavor.
  5. Line a baking sheet with aluminum foil for easy cleanup. Place a wire rack on top of the baking sheet. Remove the ribs from the marinade and allow excess marinade to drip off. Reserve the marinade for basting.
  6. Lay the ribs on the wire rack, meat side up. Cover them tightly with aluminum foil and bake in the preheated oven for 2 hours.
  7. After 2 hours, remove the foil and baste the ribs with the reserved marinade. Increase the oven temperature to 400°F (200°C) and return the ribs to the oven, uncovered, for an additional 20-30 minutes until caramelized and slightly crispy.
  8. Once cooked, remove the ribs from the oven and let them rest for 10 minutes before slicing.
  9. Sprinkle fresh pomegranate seeds and chopped parsley over the ribs for a festive touch before serving.

  • For best results, marinate the ribs overnight.
  • Adjust the crushed red pepper flakes according to your spice preference.
