  • 200ml heavy whipping cream
  • 100g granulated sugar
  • 1 teaspoon vanilla extract
  • 200g coconut biscuits (like Raffaello or similar)
  • 200ml coconut milk
  • 50g desiccated coconut (for garnish)
  • 50g white chocolate shavings (for garnish, optional)

Instructions

  1. In a large bowl, combine the mascarpone cheese, heavy whipping cream, granulated sugar, and vanilla extract. Beat the mixture with an electric mixer until smooth and creamy.
  2. In a shallow dish, pour the coconut milk. This will be used for soaking the biscuits.
  3. Quickly dip each coconut biscuit into the coconut milk, ensuring they are soaked but not too soggy. Lay them in a single layer in a rectangular dish.
  4. Spread a layer of the cream mixture over the soaked biscuits, smoothing it out evenly with a spatula.
  5. Continue layering by dipping more biscuits in coconut milk and placing them over the cream layer. Add another layer of cream on top and repeat until all ingredients are used, finishing with a cream layer.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight for the best flavor and texture.
  7. Before serving, sprinkle the top with desiccated coconut and optionally add white chocolate shavings for an elegant touch.
  8. Use a sharp knife to cut the tiramisu into squares for serving.
