Raspberry Coconut Magic Bars are a delicious treat that combines the sweetness of raspberries with the richness of coconut and chocolate.

  • 1 cup graham cracker crumbs
  • ½ cup unsweetened shredded coconut
  • ½ cup unsalted butter, melted
  • 1 cup sweetened condensed milk
  • 1 cup fresh raspberries (or frozen, thawed)
  • ½ cup semi-sweet chocolate chips
  • ½ cup chopped nuts (optional)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and a pinch of salt. Mix until well combined.
  3. Pour the graham cracker mixture into the prepared baking dish. Press it down evenly to form a solid crust.
  4. Gently scatter the raspberries evenly over the crust, pressing them down slightly.
  5. In another bowl, combine sweetened condensed milk, shredded coconut, chocolate chips, and vanilla extract. Stir until well mixed.
  6. Pour the coconut mixture over the raspberries, spreading it evenly.
  7. If you desire, sprinkle chopped nuts on top for added texture.
  8. Place the baking dish in the preheated oven and bake for 25-30 minutes or until the top is golden brown.
  9. Once done, remove from the oven and allow the bars to cool in the baking dish for 10-15 minutes.
  10. After cooling, cut into squares for serving.
