  • 4 cups granulated sugar
  • 1 cup light corn syrup
  • 1 cup purified water
  • 1 tsp cinnamon oil or cinnamon extract
  • Red gel food coloring (optional)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Combine sugar, corn syrup, and water in a large, heavy-bottomed saucepan over medium heat. Stir until sugar dissolves.
  2. Increase heat to high and bring the mixture to a boil without stirring.
  3. Attach a candy thermometer and continue boiling until the syrup reaches 300°F (hard crack stage).
  4. Remove from heat immediately.
  5. Carefully stir in cinnamon oil/extract and red gel food coloring. Stand back as steam will rise.
  6. Working quickly, pour the hot candy onto a greased baking sheet or into silicone candy molds.
  7. Let the candy cool completely at room temperature until hardened (about 30-45 minutes).
  8. Once hardened, break into pieces or pop from molds.
  9. Optionally, dust with powdered sugar to prevent sticking.
