Red Velvet Cheesecake Swirl Cake is a delightful dessert that combines rich red velvet cake with a creamy cheesecake layer.

  • For the Red Velvet Cake:
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon cocoa powder
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • For the Cheesecake Swirl:
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until smooth and no lumps remain.
  5. In a separate bowl, beat the softened cream cheese and sugar until smooth. Add eggs and vanilla extract, mixing until well combined.
  6. Pour half of the red velvet cake batter into the prepared baking pan. Spread the cheesecake mixture on top, then dollop the remaining red velvet batter over the cheesecake layer.
  7. Use a knife or a skewer to gently swirl the cheesecake into the red velvet batter for a marbled effect.
  8. Place in the preheated oven and bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  9. Once baked, remove from the oven and allow the cake to cool in the pan for about 30 minutes before transferring it to a wire rack to cool completely.
  10. After cooling, slice and serve as desired.
