Sausage Egg Breakfast Roll-Ups are a delicious and filling breakfast option.

  • 1 cup cooked sausage, crumbled (choose your favorite type)
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 4 medium-sized tortillas (flour or corn)
  • 1/4 cup diced bell peppers (optional)
  • 1/4 cup diced onions (optional)
  • Salt and pepper to taste
  • Cooking spray or oil for the pan

Instructions

  1. Heat a non-stick skillet over medium heat and add a little cooking spray or oil.
  2. Add the crumbled sausage to the skillet and cook until browned and heated through. Remove from the pan and set aside.
  3. In a bowl, whisk the eggs with salt and pepper. Pour the eggs into the same skillet and cook, stirring gently, until they are just set.
  4. Stir the cooked sausage and shredded cheese into the scrambled eggs. Mix until the cheese is melted and incorporated.
  5. Warm the tortillas in a separate skillet or microwave for a few seconds to make them pliable.
  6. Spoon a portion of the sausage and egg mixture onto each tortilla, adding optional bell peppers or onions if desired.
  7. Fold in the sides of the tortilla and roll it up tightly. Repeat with the remaining tortillas.
  8. Place the roll-ups seam-side down in the skillet and cook for 1-2 minutes, until golden brown and crispy.
  9. Remove from the skillet and let cool slightly before serving.
