1 pound lean ground turkey
2 medium sweet potatoes (about 2 cups, cubed)
1 medium onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon cumin
Instructions
Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
Peel and cube sweet potatoes into bite-sized pieces. Toss with olive oil, salt, pepper, and paprika in a bowl. Spread evenly in the prepared baking dish.
Heat olive oil in a skillet over medium heat. Sauté onion until translucent (about 5 minutes), then add garlic and cook for an additional minute.
Add ground turkey to the skillet, cooking until browned (6-7 minutes). Season with cumin; adjust salt and pepper to taste.
Layer sautéed turkey mixture over sweet potatoes in the baking dish. Stir gently if desired.
Cover with foil and bake for about 30 minutes. Remove foil during the last 10 minutes for crispy edges.
