  • 2 medium onions
  • 2 cups heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 cup grated cheddar cheese
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the russet potatoes, about 1/8 inch thick.
  3. In a large skillet over medium heat, add olive oil and butter. Add thinly sliced onions and cook for 15-20 minutes, stirring occasionally, until soft and golden brown.
  4. In a bowl, combine heavy cream, garlic powder, salt, pepper, and thyme. Mix well.
  5. Grease a baking dish. Layer half of the sliced potatoes, then half of the cream mixture, and half of the caramelized onions.
  6. Add the remaining potatoes, followed by the rest of the cream mixture, and top with the remaining caramelized onions.
  7. Sprinkle the grated cheddar cheese evenly over the top.
  8. Cover the dish with aluminum foil and bake for 45 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
  10. Let the scalloped potatoes with caramelized onions sit for about 10 minutes before serving.
