Ingredients
Scale
1 pound large shrimp, peeled and deveined
1/4 cup unsalted butter, melted
2 tablespoons Cajun seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional, for extra heat)
Salt and pepper, to taste
1 bell pepper, sliced
1 zucchini, sliced
1 cup cherry tomatoes, halved
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Instructions
Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper for easy cleanup.
In a large bowl, combine the peeled and deveined shrimp with melted butter, Cajun seasoning, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Toss until the shrimp are well coated.
In another bowl, combine the sliced bell pepper, zucchini, and cherry tomatoes. Drizzle with a little olive oil, salt, and pepper, and toss to coat.
Spread the seasoned shrimp and vegetables evenly across the prepared sheet pan, ensuring they are in a single layer for even cooking.
Place the sheet pan in the preheated oven and bake for 15-20 minutes, or until the shrimp are pink and opaque, and the vegetables are tender.
Remove the pan from the oven and sprinkle with chopped parsley for a fresh touch.
Serve immediately with lemon wedges on the side for an extra burst of flavor.
