  • 2 tablespoons olive oil
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 2 tablespoons honey
  • 3 cloves garlic, minced

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the Marinade: In a small bowl, whisk together olive oil, orange juice, lemon juice, honey, minced garlic, oregano, salt, and black pepper.
  3. Marinate the Chicken: Place the chicken breasts in a resealable bag or a shallow dish. Pour half of the marinade over the chicken, ensuring it is well coated. Let it marinate for at least 15 minutes.
  4. Prepare the Vegetables: While the chicken marinates, slice the bell peppers and onion. Toss them with the remaining marinade in a separate bowl.
  5. Arrange on Sheet Pan: Line a baking sheet with parchment paper or aluminum foil for easy cleanup. Place the marinated chicken in the center of the sheet pan and arrange the vegetables around it.
  6. Bake: Place the sheet pan in the preheated oven and bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. For a crispy texture, switch to broil mode for the last 3-5 minutes of cooking, watching closely to prevent burning.
  8. Remove the sheet pan from the oven, garnish with fresh parsley, and serve warm.
