  • 2 bell peppers (any color), chopped
  • 1 large red onion, cut into wedges
  • 2 tablespoons olive oil

  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together olive oil, soy sauce, honey, minced garlic, smoked paprika, cumin, salt, and pepper.
  3. Add the beef pieces to the marinade, mixing well to coat evenly. Let it marinate for at least 15 minutes.
  4. While the beef marinates, chop the bell peppers and onion into bite-sized pieces.
  5. On a large sheet pan, spread the marinated beef, bell peppers, and onion in a single layer.
  6. Place the sheet pan in the preheated oven and roast for 25-30 minutes or until the beef is cooked through and the vegetables are tender.
