Sheet Pan Hawaiian Chicken is a quick and easy meal that brings the sweet and savory flavors of Hawaii to your table. This one-pan wonder features juicy chicken, sweet pineapple, and colorful vegetables, all baked together for minimal cleanup and maximum flavor.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, cut into wedges
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon lime juice
  • 1 teaspoon black pepper
  • Chopped green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together the soy sauce, honey, sesame oil, garlic, ginger, lime juice, and black pepper to prepare the marinade.
  3. Place the chicken breasts in a large resealable plastic bag or dish. Pour half of the marinade over the chicken, ensuring it is well coated. Marinate for at least 15 minutes, or up to a few hours for more flavor.
  4. Arrange the marinated chicken breasts, pineapple chunks, sliced bell peppers, and onion wedges in a single layer on a large sheet pan.
  5. Drizzle the remaining marinade over the chicken and vegetables.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through with an internal temperature of 165°F (74°C).
  7. For a crispy finish, you can broil for the last 2-3 minutes.
  8. Remove from the oven and garnish with chopped green onions and sesame seeds.
  9. Let the Sheet Pan Hawaiian Chicken rest for a few minutes before serving.

Notes

  • For deeper flavor, marinate the chicken overnight.
  • Feel free to add other vegetables like zucchini or broccoli.
  • Use chicken thighs for a more moist dish.
  • If you don’t have sesame oil, olive oil can be used as a substitute.
  • Frozen pineapple can be used if thawed and drained.
