4 bone-in, skin-on chicken thighs
2 medium zucchinis, sliced into half-moons
1/4 cup hot honey
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 425°F (220°C).
Pat the chicken thighs dry with paper towels.
In a small bowl, mix together garlic powder, smoked paprika, salt, and black pepper. Rub this mixture all over the chicken thighs.
In a separate bowl, toss the sliced zucchini with olive oil and a pinch of salt and pepper.
Place the seasoned chicken thighs skin-side up on a large sheet pan. Arrange the zucchini around the chicken.
Generously drizzle hot honey over the chicken and zucchini.
Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy.
Once cooked, remove the pan from the oven and sprinkle with chopped fresh parsley.
Let the dish rest for a few minutes before serving.
Notes
Serve with rice or bread to soak up the hot honey.
