Shrimp and Sausage Dirty Rice is a delightful dish that combines the robust flavors of shrimp and sausage with the heartiness of rice.

  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1/4 cup green onions, chopped (for garnish)
  • Parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat.
  2. Add the sliced smoked sausage to the pot and cook until browned, about 5-7 minutes. Remove the sausage and set it aside.
  3. In the same pot, add the diced onion, bell pepper, and celery. Sauté until softened, approximately 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the Cajun seasoning, thyme, paprika, salt, and pepper. Stir well to combine.
  6. Mix in the rice and ensure it is well coated with the vegetable and spice mixture.
  7. Gradually add the chicken broth, stirring to combine. Bring the mixture to a boil.
  8. Reduce heat to low, cover the pot, and let simmer for about 15 minutes or until the rice is cooked and has absorbed the liquid.
  9. Once the rice is cooked, gently fold in the shrimp and the previously cooked sausage. Cover and cook for another 5 minutes or until the shrimp are pink and cooked through.
  10. Remove from heat, and fluff the rice with a fork. Garnish with chopped green onions and parsley before serving.
