1 pound ground beef (or turkey)
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes (with juice)
1 can (6 oz) tomato paste
1 cup onion, chopped
1 cup bell pepper, chopped (any color)
2 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
1 cup corn (fresh, frozen, or canned)
Optional toppings: shredded cheese, sour cream, chopped green onions, avocado
Instructions
In a skillet over medium heat, brown the ground beef (or turkey) until fully cooked. Drain excess fat and set aside.
Chop the onion, bell pepper, and garlic, ensuring they are ready for the slow cooker.
In the slow cooker, combine the browned meat, kidney beans, black beans, diced tomatoes (with juice), tomato paste, chopped onion, bell pepper, garlic, chili powder, cumin, paprika, salt, and black pepper.
Stir all the ingredients together until evenly combined.
Cover and cook on low for 6–8 hours or on high for 4–5 hours.
During the last 30 minutes of cooking, add the corn to the slow cooker and stir.
Taste the chili and adjust seasoning if necessary. You may want to add more salt, pepper, or chili powder according to your preference.
Ladle the chili into bowls and add your favorite toppings like shredded cheese, sour cream, green onions, or avocado.
