  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets (steamed)
  • 1/2 cup shredded carrots
  • 1/4 cup sliced green onions (for garnish)
  • 1/2 cup sour cream
  • 1/4 cup sweet chili sauce
  • 1 teaspoon lime juice
  • Salt to taste

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, paprika, red pepper flakes, salt, and pepper. Mix until well combined.
  2. Shape the mixture into 1-inch meatballs.
  3. In a large skillet, heat olive oil over medium heat. Add the meatballs in batches, making sure not to overcrowd the pan. Cook until browned on all sides and cooked through, about 10-12 minutes. Transfer to a plate and set aside.
  4. In a small bowl, whisk together sour cream, sweet chili sauce, lime juice, and salt until smooth. Adjust seasoning to taste.
