6 large eggs
1/4 cup mayonnaise
1 tbsp yellow mustard
3 drops green food coloring
12 pitted black olives (for decoration)
Salt and pepper to taste
Instructions
Boil the eggs: Place eggs in a pot, cover with cold water, bring to a boil, turn off heat, cover, and let sit for 12-15 minutes.
Cool and peel: Transfer eggs to an ice bath for 5 minutes, then peel under running water.
Prepare the filling: Halve the eggs lengthwise, scoop out yolks into a bowl, add mayonnaise, mustard, green food coloring, salt, and pepper. Mash until smooth.
Fill egg whites: Spoon or pipe the yolk mixture back into the egg whites.
Create spooky eyes: Slice olives and place one slice on top of each egg as an ‘eye.’
Chill and serve: Refrigerate for at least an hour before serving.
