Stuffed Apples with Cheddar and Sausage is a savory dish that combines the sweetness of apples with the richness of sausage and cheddar cheese.

  • 4 medium-sized apples (Granny Smith or Honeycrisp)
  • 1 pound of ground sausage (pork or turkey)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • Optional: Chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Core the apples, creating a hollow center while leaving the bottom intact. Set aside.
  3. In a skillet over medium heat, add olive oil and sauté chopped onion until translucent. Then, add minced garlic and cook for another minute.
  4. Increase heat to medium-high and add the ground sausage to the skillet. Cook until browned and fully cooked, breaking it apart with a spatula.
  5. In a large bowl, mix the cooked sausage, cheddar cheese, breadcrumbs, thyme, sage, salt, and pepper until well combined.
  6. Generously fill each apple with the sausage mixture until packed tight. Sprinkle a bit of brown sugar on top of each stuffed apple for added sweetness.
  7. Place the stuffed apples in the prepared baking dish. Pour a small amount of water (about 1/4 inch) into the bottom of the dish to help keep the apples moist while baking.
  8. Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the apples are tender and the tops are golden.
  9. Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley if desired.
