Ingredients

Scale
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 1/4 cup sweet chili sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • Salt and pepper to taste
  • Chopped green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Prepare Chicken: Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  2. Heat Oil: In a large skillet or wok, heat vegetable oil over medium-high heat.
  3. Cook Chicken: Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. Sauté Vegetables: In the same skillet, add the chopped red and green bell peppers, broccoli, garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Make Sauce: In a bowl, whisk together soy sauce, sweet chili sauce, honey, and lime juice. Pour the sauce over the vegetables in the skillet.
  6. Add Chicken Back: Return the cooked chicken to the skillet and stir to coat the chicken and vegetables in the sauce.
  7. Thicken (Optional): If a thicker sauce is desired, add the cornstarch mixture to the skillet and stir until the sauce thickens.
  8. Adjust Seasoning: Taste and adjust seasoning with additional salt and pepper as needed.
  9. Garnish: Remove from heat and garnish with chopped green onions and sesame seeds.
  10. Serve: Transfer the Sweet Chili Chicken to a serving dish.
