Sweet & Spicy Korean Meatloaf is a flavorful and satisfying dish that combines the richness of beef with a sweet and spicy glaze.

  • 1 ½ pounds ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 large egg
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon sesame oil
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon red pepper flakes (optional, for extra spice)
  • ¼ cup scallions, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, grated ginger, egg, soy sauce, brown sugar, gochujang, sesame oil, black pepper, salt, and red pepper flakes (if using).
  3. Use your hands or a spoon to mix all the ingredients until well combined.
  4. Transfer the meat mixture to a baking dish and shape it into a loaf, smoothing the top and sides.
  5. In a small bowl, whisk together the ketchup, brown sugar, soy sauce, and rice vinegar until smooth.
  6. Brush half of the glaze over the top of the meatloaf, reserving the other half for later.
  7. Place the meatloaf in the preheated oven and bake for 45 minutes.
  8. After 45 minutes, remove the meatloaf from the oven and brush the remaining glaze over the top.
  9. Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
  10. Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
  11. Slice the meatloaf and garnish with chopped scallions.

  • Make sure not to overmix the meatloaf to keep it tender.
  • Letting it rest before slicing helps maintain moisture.
  • Adjust the spice level by modifying the red pepper flakes.
