Ingredients

Scale
  • For the Teriyaki Salmon:
  • 4 salmon fillets
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • For the Rice:
  • 2 cups jasmine rice
  • 4 cups water
  • 1 teaspoon salt
  • For the Spicy Wasabi Mayo:
  • 1/2 cup mayonnaise
  • 1 tablespoon wasabi paste (adjust to taste)
  • 1 teaspoon lime juice
  • Salt, to taste
  • Optional Toppings:
  • Sliced cucumbers
  • Shredded carrots
  • Avocado slices
  • Extra green onions

Instructions

  1. Prepare the Rice: Rinse the jasmine rice until the water runs clear. In a medium pot, combine rice, water, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15-18 minutes until tender. Let sit, covered, for 5 minutes. Fluff with a fork.
  2. Cook the Salmon: Whisk soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger in a small bowl. Preheat a skillet over medium-high heat. Sear salmon fillets skin-side down for 4-5 minutes until crispy. Flip, pour teriyaki sauce over salmon, and cook for 3-4 minutes more, basting, until cooked through.
  3. Make the Spicy Wasabi Mayo: Combine mayonnaise, wasabi paste, lime juice, and salt in a small bowl. Mix well and adjust wasabi to your preference.
  4. Assemble the Bowls: Place jasmine rice in serving bowls. Top with a salmon fillet and drizzle with teriyaki sauce. Add optional toppings like cucumbers, carrots, and avocado. Finish with a dollop of spicy wasabi mayo and sprinkle with green onions and sesame seeds.
