2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 packet (2 ¼ teaspoons) active dry yeast
¾ cup warm water (about 110°F)
1 tablespoon olive oil
1 cup barbecue sauce
1 ½ cups cooked chicken, shredded
1 cup red onion, thinly sliced
1 cup bell peppers, sliced
1 ½ cups shredded mozzarella cheese
½ cup sliced jalapeños (optional)
Fresh cilantro, for garnish (optional)
Instructions
In a mixing bowl, combine the warm water and sugar. Sprinkle the yeast on top and let it sit for about 5 minutes until it becomes frothy.
In a separate bowl, whisk together the flour and salt.
Once the yeast mixture is frothy, stir in the olive oil. Gradually add the flour mixture to the yeast mixture, stirring until a dough forms.
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm area for about 30 minutes, or until doubled in size.
Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.
Once the dough has risen, punch it down and roll it out on a floured surface into your desired pizza shape (round or rectangular).
Transfer the rolled-out dough to a parchment-lined baking sheet or pizza peel. Spread a generous layer of barbecue sauce over the base. Top with shredded chicken, red onions, bell peppers, and jalapeños if using. Finally, sprinkle mozzarella cheese evenly over the top.
Carefully transfer the pizza onto the preheated pizza stone or baking sheet. Bake for 20-25 minutes or until the crust is golden brown and the cheese is bubbling.
Once baked, remove the pizza from the oven. Allow it to rest for about 10 minutes before slicing.
Sprinkle fresh cilantro over the pizza for an added burst of flavor, if desired.
