  • 4 tilapia fillets
  • 2 red bell peppers
  • 1 yellow bell pepper
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • ½ cup chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roast the whole red and yellow bell peppers on a baking sheet for 20-25 minutes or until the skin is charred and blistered. Remove and let cool.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional minute.
  4. Once the peppers are cool, peel off the charred skin, remove the seeds, and dice the flesh. Add the diced peppers to the skillet along with the chicken or vegetable broth, paprika, salt, and black pepper. Simmer for 5 minutes to allow the flavors to meld.
  5. Season the tilapia fillets with salt and pepper. In another skillet, heat a little olive oil over medium-high heat. Cook the tilapia fillets for about 3-4 minutes on each side, or until they are golden brown and cooked through.
  6. Once the tilapia is cooked, pour the roasted pepper sauce over the fillets in the skillet. Let it simmer for an additional minute to warm the fish and allow the flavors to combine.
  7. Remove from heat and garnish with fresh parsley if desired.
