1 cup Graham cracker crumbs
1/4 cup Sugar
1/2 cup Unsalted butter, melted
8 oz Cream cheese, softened
1/2 cup Powdered sugar
1 tsp Vanilla extract
1/2 cup Heavy whipping cream
1 cup Mixed tropical fruits (pineapple, mango, kiwi), diced
to taste Fresh mint leaves for garnish (optional)
Instructions
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
Spoon about 2 tablespoons of the graham cracker mixture into the bottom of each serving cup. Press down gently to form an even layer.
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, continuing to beat until fully combined.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Spoon the cheesecake filling over the crust in each cup, filling them about 3/4 full.
Top the cheesecake layer with a generous amount of the mixed tropical fruits.
Refrigerate the cheesecake cups for at least 2 hours to allow the flavors to meld and the filling to set.
