Zucchini Rollatini is a delicious and healthy alternative to traditional pasta dishes, featuring tender zucchini rolls filled with a creamy ricotta mixture and topped with marinara sauce and cheese. It’s a light, nutrient-rich, and visually appealing dish perfect for meal prep or impressing guests.

Ingredients

Scale
  • 2 medium-sized zucchinis
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the zucchinis lengthwise into thin strips, about 1/8 inch thick.
  2. Place the zucchini slices on a clean kitchen towel. Sprinkle them with salt and let them sit for about 15 minutes to draw out excess moisture.
  3. In a medium bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well until creamy and combined.
  4. After 15 minutes, rinse the zucchini slices under cold water to remove the salt. Pat them dry with a paper towel.
  5. Lay a zucchini slice on a flat surface. Spoon 1-2 tablespoons of the cheese mixture onto the wide end of the slice and roll it up.
  6. Continue this process until all the zucchini slices and filling are used.
  7. Spread a thin layer of marinara sauce on the bottom of a baking dish. Arrange the rolled zucchini seams-side down in the dish.
  8. Pour the remaining marinara sauce over the zucchini rolls, ensuring they are well-covered. Sprinkle the remaining mozzarella cheese on top.
  9. Bake in the preheated oven for 30-35 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
  10. Allow the dish to cool for a few minutes before serving.

Notes

  • Use fresh, young zucchinis for the best results.
  • Experiment with different cheeses or add vegetables like spinach to the filling.
  • For a spicier kick, use spicy marinara sauce or add chili flakes.
  • This dish can be made vegan by substituting ricotta with a tofu-based mixture.
  • Salting the zucchini before rolling helps prevent a watery dish.
