4 large potatoes, peeled and diced
1 medium onion, chopped
3 cups vegetable broth
1 cup heavy cream
2 tablespoons butter
Salt and pepper, to taste
Optional toppings: shredded cheese, chives, or crispy bacon
Instructions
Peel and dice the potatoes and chop the onion.
In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Stir in the diced potatoes and cook for another 2-3 minutes.
Add the vegetable broth to the pot and bring to a boil. Reduce heat and let simmer for about 20 minutes, or until the potatoes are tender.
Once the potatoes are cooked, use an immersion blender to blend the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches.
Stir in the heavy cream and season with salt and pepper to taste. Heat through, but do not boil.
Ladle the soup into bowls and top with your choice of toppings such as shredded cheese, chives, or crispy bacon.
