2 medium apples (such as Honeycrisp or Granny Smith), thinly sliced
1 cup pecans, halved
¼ cup maple syrup
2 tablespoons olive oil
1 tablespoon apple cider vinegar
Salt and pepper, to taste
Crumbled feta cheese (optional)
Dried cranberries (optional)
Instructions
Set your oven to 350°F (175°C) to toast the pecans.
Spread the pecans on a baking sheet and drizzle with half of the maple syrup. Bake for about 10 minutes, stirring halfway through, until golden and fragrant. Remove from oven and let cool.
In a small bowl, whisk together the olive oil, apple cider vinegar, remaining maple syrup, salt, and pepper until well combined.
In a large bowl, combine the arugula and sliced apples. Drizzle with the dressing and toss gently to coat.
Once cooled, add the toasted maple pecans to the salad and toss gently to incorporate.
