  • 4 chicken thighs (bone-in, skin-on or boneless)
  • 1 cup pineapple juice
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1 teaspoon black pepper
  • 1 green onion, chopped (for garnish)
  • Fresh pineapple slices (for grilling, optional)

Instructions

  1. In a bowl, combine pineapple juice, soy sauce, brown sugar, vegetable oil, garlic, ginger, sesame oil, and black pepper. Whisk until well mixed.
  2. Marinate the chicken: Place the chicken thighs into a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour.
  3. Preheat the grill: Heat your grill to medium-high heat. Oil the grates to prevent sticking.
  4. Remove chicken from marinade: Take the chicken out of the marinade, allowing excess marinade to drip off. Discard the used marinade.
  5. Grill the chicken: Place the chicken on the grill, skin side down if using skin-on thighs. Grill for about 7-10 minutes per side, or until the internal temperature reaches 165°F (75°C).
  6. If desired, grill pineapple slices for a few minutes on each side until charred and caramelized.
  7. Once cooked, remove the chicken from the grill and let it rest for about 5 minutes.
  8. Sprinkle chopped green onions on top for added flavor and color.
  9. Arrange the grilled chicken on a platter, optionally adding grilled pineapple slices for garnish.
