- 1 cup wild rice
- 2 cups vegetable broth or water
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup fresh or frozen cherries, pitted and halved
- ½ cup pecans, roughly chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Rinse the wild rice under cold water until the water runs clear.
- In a medium saucepan, combine the wild rice and vegetable broth. Bring to a boil.
- Reduce the heat to low, cover, and let simmer for 40-45 minutes, or until the rice is tender and the broth is absorbed.
- While the rice cooks, heat olive oil in a skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Once the rice is cooked, add it to the skillet with the onions and garlic.
- Fold in the cherries, pecans, dried thyme, and sage. Stir until well combined.
- Season with salt and pepper to taste. Allow the flavors to meld over low heat for about 5 minutes.
- Remove from heat and let it rest for a few minutes before serving.
- Garnish with freshly chopped parsley before serving.
