1 ripe avocado
2 slices whole grain bread
1 tbsp fresh lemon juice
1/4 tsp salt
1/4 tsp black pepper
Optional: 1 large egg (poached or fried), cheese, or sliced tomatoes
Instructions
Toast the whole grain bread until golden brown.
While the bread is toasting, slice the avocado in half, remove the pit, and scoop it into a bowl. Mash lightly with a fork, adding lemon juice, salt, and pepper to taste.
Once the toast is ready, spread mashed avocado generously on each slice.
If desired, top one slice with a cooked egg and any additional toppings before closing the sandwich.
