  • 2 lbs chicken thighs (bone-in, skin-on for best flavor)
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper (adjust for spice level)
  • ½ cup honey
  • 2 tablespoons hot sauce (adjust for spice level)
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, soak the chicken thighs in buttermilk for at least 30 minutes.
  3. In a separate bowl, mix together the flour, panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper.
  4. Remove each chicken thigh from the buttermilk, allowing excess to drip off. Dredge in the breadcrumb mixture, pressing down to ensure a good coating.
  5. Place the coated chicken on the prepared baking sheet. Drizzle with melted butter for added crispiness.
  6. Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through and the coating is golden brown.
  7. While the chicken is baking, combine honey and hot sauce in a small saucepan over medium heat. Stir until warmed and well mixed.
  8. Once the chicken is done baking, drizzle the hot honey mixture over the top.
  9. Return the chicken to the oven for an additional 5-7 minutes to allow the glaze to caramelize slightly.
  10. Remove from the oven and let cool for a few minutes before serving.
