1 pound shrimp, peeled and deveined
1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon cayenne pepper (adjust for spice preference)
1 cup buttermilk
Vegetable oil, for frying
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon Sriracha (optional, for extra heat)
8 small flour tortillas
Shredded lettuce, for serving
Chopped green onions, for garnish
Fresh cilantro, for garnish
Instructions
In a bowl, combine the flour, cornstarch, salt, black pepper, paprika, and cayenne pepper.
Dip each shrimp into the buttermilk, letting the excess drip off. Then, dredge the shrimp in the flour mixture until well coated.
In a large pan, heat about 1 inch of vegetable oil over medium-high heat until hot.
Carefully add the coated shrimp to the hot oil in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove and place on a paper towel-lined plate to drain.
In a separate bowl, mix together the mayonnaise, sweet chili sauce, and Sriracha until smooth. Adjust the heat by adding more Sriracha if desired.
In a dry skillet over medium heat, warm the tortillas for about 30 seconds on each side until soft and pliable.
Place a generous amount of shredded lettuce on each tortilla. Top with crispy shrimp and drizzle with the Bang Bang sauce.
Finish with chopped green onions and fresh cilantro for added flavor and color.
