1 pre-made pizza crust (or homemade)
1 cup cooked chicken, shredded
1/2 cup barbecue sauce
1 1/2 cups shredded mozzarella cheese
1/2 cup red onion, thinly sliced
1/4 cup cilantro, chopped (for garnish)
1/2 cup corn kernels (optional)
1/2 cup bell pepper, sliced (optional)
Olive oil (for brushing the crust)
Instructions
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up as well.
In a bowl, mix the shredded chicken with 1/2 cup of barbecue sauce. Ensure the chicken is well coated.
If using homemade dough, roll it out on a floured surface to your desired thickness. If using a pre-made crust, simply unroll it on a pizza stone or baking sheet.
Lightly brush the edges of the pizza crust with olive oil. This will help it achieve a golden brown color.
Spread a thin layer of barbecue sauce over the crust, leaving a small border around the edges.
Evenly distribute the barbecue chicken mixture over the sauce.
Sprinkle the shredded mozzarella cheese generously over the chicken.
If desired, add thinly sliced red onions, corn, and bell peppers on top of the cheese.
Place the pizza in the preheated oven (or on the heated pizza stone) and bake for 15-20 minutes, or until the crust is golden brown and the cheese is bubbling.
Once out of the oven, sprinkle chopped cilantro over the top for a fresh flavor boost.
