1 pound ground beef (preferably 80/20 for juiciness)
1 small onion, finely grated
2 cloves garlic, minced
1/4 cup fresh parsley, finely chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cinnamon (optional)
1 tablespoon olive oil (for grilling)

Instructions
If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
Mix Ingredients: In a large bowl, combine the ground beef, grated onion, minced garlic, parsley, cumin, coriander, paprika, salt, pepper, and cinnamon. Mix until well combined.
Shape Kebabs: Take a handful of the meat mixture and mold it around the skewers. Shape into long, oval kebabs about 1 inch thick.
Chill (Optional): For better flavor and structure, cover the kebabs with plastic wrap and chill in the refrigerator for 15-30 minutes.
