- 1 pound beef stew meat, cut into cubes
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 carrots, sliced
- 1 bell pepper, diced
- 1 cup green beans, trimmed and cut
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce (optional)
- 1 teaspoon turmeric
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Cooked rice, for serving
- In a large pot, heat the vegetable oil over medium heat.
- Add the beef cubes and brown them on all sides. This should take about 5-7 minutes.
- Once browned, add the chopped onion, garlic, and ginger. Sauté until the onion is translucent, about 3-4 minutes.
- Stir in the sliced carrots, diced bell pepper, and green beans. Cook for another 5 minutes.
- Sprinkle the curry powder, turmeric, salt, and pepper. Stir well to coat the beef and vegetables.
- Add the coconut milk, soy sauce, and fish sauce (if using). Stir until combined.
