  • 1 pound beef stew meat, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 carrots, sliced
  • 1 bell pepper, diced
  • 1 cup green beans, trimmed and cut
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce (optional)
  • 1 teaspoon turmeric
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the beef cubes and brown them on all sides. This should take about 5-7 minutes.
  3. Once browned, add the chopped onion, garlic, and ginger. Sauté until the onion is translucent, about 3-4 minutes.
  4. Stir in the sliced carrots, diced bell pepper, and green beans. Cook for another 5 minutes.
  5. Sprinkle the curry powder, turmeric, salt, and pepper. Stir well to coat the beef and vegetables.
  6. Add the coconut milk, soy sauce, and fish sauce (if using). Stir until combined.
  7. Bring the mixture to a gentle simmer. Reduce the heat to low and cover the pot. Let it cook for 45 minutes, stirring occasionally.
  8. Taste the curry and adjust seasoning with more salt and pepper if needed.
  9. Remove from heat and garnish with fresh cilantro before serving.
  10. Serve the curry hot over a bed of cooked rice.
