Birria tacos are an incredible Mexican dish. They feature succulent meat, aromatic spices, and melted cheese. This recipe brings traditional flavors to your table, perfect for gatherings or a cozy meal.

  • 2 pounds beef chuck roast, cut into 2-inch pieces
  • 1 tablespoon olive oil
  • 1 large white onion, quartered
  • 4 cloves garlic, smashed
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 8 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 chipotle pepper in adobo sauce, minced (optional)
  • Corn tortillas
  • Shredded Monterey Jack or Oaxaca cheese
  • Chopped white onion, for garnish
  • Chopped cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Season beef generously with salt and pepper.
  2. Heat olive oil in a large Dutch oven or pot over medium-high heat. Sear beef on all sides until browned. Remove beef and set aside.
  3. Add the quartered onion and smashed garlic to the pot. Cook until softened and slightly browned, about 5 minutes.
  4. Stir in dried oregano, cumin, chili powder, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  5. Return the beef to the pot. Add beef broth, diced tomatoes, bay leaves, and chipotle pepper in adobo sauce (if using). Bring to a simmer.
  6. Cover the pot and reduce heat to low. Simmer for 2.5 to 3 hours, or until the beef is fork-tender.
  7. Remove beef from the pot and shred it using two forks. Skim fat from the surface of the cooking liquid (consommé) and discard bay leaves. You can strain the consommé for a smoother texture if desired.
  8. To assemble the tacos, dip each corn tortilla into the consommé to soften it.
  9. Place a portion of shredded beef onto one half of the softened tortilla. Sprinkle generously with cheese.
  10. Fold the tortilla in half to create a taco.
  11. Heat a lightly oiled skillet or griddle over medium heat. Cook the tacos for 2-3 minutes per side, until golden brown and the cheese is melted and gooey.
  12. Serve the incredible birria tacos immediately with chopped onion, cilantro, lime wedges, and a side of the warm consommé for dipping.

Notes

  • For extra flavor, you can marinate the beef overnight in a mixture of chili powder, cumin, oregano, garlic, and a splash of vinegar.
  • If you don’t have beef chuck roast, you can use beef short ribs or brisket.
  • Adjust the spice level by adding more or less cayenne pepper or canned chipotle peppers.
