A bold and flavorful harissa chicken recipe with roasted potatoes and leeks, finished with a cooling yogurt sauce. This dish offers a spicy kick from harissa balanced by earthy vegetables and creamy yogurt, making it perfect for a weeknight dinner or special occasion.

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons harissa paste
  • 4 medium-sized potatoes, cut into chunks
  • 2 leeks, cleaned and sliced
  • 1 cup plain yogurt
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh herbs (parsley or cilantro), for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the harissa paste, 1 tablespoon olive oil, minced garlic, salt, and pepper to prepare the marinade.
  3. Coat the chicken thighs in the harissa mix. Let marinate for at least 15 minutes for the best flavor.
  4. Meanwhile, place the potato chunks and sliced leeks in a large baking dish. Drizzle with the remaining 2 tablespoons of olive oil and season with salt and pepper. Toss to coat evenly.
  5. Nestle the marinated harissa chicken thighs into the baking dish with the potatoes and leeks.
  6. Place the baking dish in the preheated oven and bake for 30-40 minutes, or until the chicken is cooked through and the potatoes are tender.
  7. While the chicken and vegetables are roasting, mix the plain yogurt with a pinch of salt and chopped fresh herbs in a separate bowl to prepare the yogurt sauce.
  8. Verify that the chicken has reached an internal temperature of 165°F (75°C).
  9. Once cooked, take the dish out of the oven and allow it to rest for a few minutes.
  10. Spoon the roasted harissa chicken and vegetables onto serving plates and top generously with the yogurt sauce.
