1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups fresh broccoli florets
2 cups vegetable broth (or chicken broth)
1 cup milk (or cream for a richer soup)
Salt and pepper, to taste
Optional: 1/4 teaspoon nutmeg
Optional: Grated cheese for topping
Optional: Croutons for garnish
Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
Add the fresh broccoli florets to the pot and stir to combine with the onions and garlic.
Add the vegetable broth or chicken broth to the pot. Bring the mixture to a boil over medium-high heat.
Once boiling, reduce the heat to low and let the soup simmer for about 10-12 minutes, or until the broccoli is tender.
Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup in batches to a countertop blender. Blend until creamy and return to the pot.
Stir in the milk (or cream) to the blended soup. Heat gently over low heat, but do not boil.
Taste the soup and season with salt, pepper, and nutmeg if desired. Adjust the seasoning according to your preferences.
Ladle the soup into bowls and top with grated cheese and croutons if desired.
Notes
For a heartier meal, consider adding cooked chicken, white beans, or lentils to boost the protein content.
