Brothy Broccoli Leek Soup with White Beans: An Amazing Ultimate Recipe

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium leek, sliced and rinsed
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 cups broccoli florets
  • 1 can (15 oz) white beans, drained and rinsed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • Juice of 1 lemon
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sliced leeks and sauté until they become soft and translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the vegetable broth to the pot and bring to a gentle simmer.
  4. Once simmering, add the broccoli florets and cook for about 10 minutes until they are tender but still vibrant green.
  5. Stir in the drained white beans, salt, black pepper, and red pepper flakes if using. Let cook for an additional 5 minutes to heat the beans through.
  6. For a creamier texture, use an immersion blender to blend part of the soup, leaving some chunky bits for texture.
  7. Stir in the lemon juice to brighten the flavors.
  8. Ladle the soup into bowls and garnish with fresh parsley before serving.
